Easy pumpkin bread is the only pumpkin bread recipe you need in your life. It’s incredibly moist and bursting with warm fall flavors! This recipe is simple, doesn’t require a mixer, and is versatile. The perfect holiday bake!

This recipe has been in my fall baking repertoire for years. Many have asked for it, but I’ve always been hesitant to share… The time has finally come to share the love, and I am sharing it big here! I couldn’t decide what variation of this recipe to post, so I opted for three varieties (four if you include the original). As you can tell, I’m indecisive.

Ingredient Line Up

The ingredients vary depending on which variation you choose to make. Below I’ve listed the ingredients for plain, moist pumpkin bread.

  • Pumpkin puree – Not pumpkin pie filling!
  • Granulated sugar
  • Brown sugar
  • Large eggs
  • Milk
  • Vegetable oil
  • All purpose flour
  • Ground cinnamon
  • Pumpkin pie spice – If you don’t have pumpkin pie spice, then you can use equal parts nutmeg, ginger, and cloves.
  • Baking soda
  • Salt

Pumpkin Bread with Maple Icing

The maple frosting has a subtle maple flavoring. Be sure to use pure maple syrup for this frosting! If you want a stronger maple flavor, then I recommend using maple extract.

Chocolate Chip Pumpkin Bread

The chocolate chip variety is easily my most baked! I love the combination of chocolate and pumpkin. I typically use dark or semi sweet chips as I think they pair best with pumpkin. If you are feeling extra fancy, then sprinkle some additional chips on top of your unbaked loaf for a beautiful presentation!

Cinnamon Streusel Pumpkin Bread

Cinnamon streusel is dangerously easy to make. So obviously, I add it to everything in fall! This variety is my favorite for breakfast or brunch. It’s the perfect match for a cup of coffee!

Tips for Easy Pumpkin Bread Success

  • With any quick bread, including this one, you have to be very careful not to over mix the batter! Use a wooden spoon or rubber spatula to gently fold the ingredients together.
  • Loosely tent your loaf with foil halfway through baking to prevent the top from over browning.
  • Lower to the second lowest rack in your oven to further help your loaf cook evenly.
  • Use quality loaf pans to prevent sticking! Nobody enjoys a perfect loaf sticking to the bottom of an old, crusty pan.

Ingredients
  

Basic Pumpkin Bread

  • 1 3/4 cup all purpose flour
  • 1 tsp baking soda
  • 1 tbsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 1 tsp salt
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/4 cup pumpkin puree
  • 1/4 cup milk
  • 1/2 cup vegetable oil

Pumpkin Bread with Maple Icing

  • 1/4 cup unsalted butter room temperature
  • 1 1/2 cup confectioners sugar
  • 1 tbsp pure maple syrup
  • 1 tbsp milk

Cinnamon Streusel Pumpkin Bread

  • 2 tbsp melted unsalted butter
  • 1/4 cup all-purpose flour
  • 2 tbsp brown sugar
  • 1 tsp ground cinnamon

Chocolate Chip Pumpkin Bread

  • 1 cup semi sweet chocolate chips

Instructions
 

Basic Pumpkin Bread

  • Preheat oven to 350°F and lower the baking rack to the second lowest position. Spray a loaf pan with nonstick spray.
  • In a large bowl, whisk the dry ingredients together.
  • In a medium bowl, whisk the pumpkin puree, both sugars, eggs, and vegetable oil until combined.
  • Pour the wet ingredients into the dry ingredients and gently fold to combine using a wooden spoon or rubber spatula.
  • Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean. If the loaf starts browning, tent it loosely with foil.

Pumpkin Bread with Maple Icing

  • Beat the butter on high until light and fluffy.
  • Add in the confectioners sugar, maple syrup, and milk. Beat until combined.
  • Ice the top of your cooled loaf.

Cinnamon Streusel Pumpkin Bread

  • In a small bowl, combine all ingredients together with a fork until crumbly.
  • Evenly sprinkle the mixture on the top of your loaf before baking.

Chocolate Chip Pumpkin Bread

  • Gently fold in the chocolate chips before adding to the prepared loaf pan.
  • Sprinkle additional chocolate chips over the top of your unbaked loaf if desired.
