Easy Royal Icing
A quick and easy royal icing perfect for sugar cookies and gingerbread men. It dries hard and tastes divine. You will love how quickly it comes together!

- 1/3 cup meringue powder
- 1 cup water
- 2 lb confectioners sugar
- 1 tbsp pure vanilla extract
In the bowl of a stand mixer fitted with the whisk attachment, mix the meringue powder and water together on high until frothy - about 2 to 3 minutes.
Place powdered sugar into the bowl and mix on low until incorporated.
Turn mixer to high for 2 minutes.
Add the vanilla extract and mix until incorporated.
Test the icing consistency and add more water 1 tbsp at a time until you reach your desired consistency. If the icing is too thin, add more confectioners sugar.
